A simple vegan banana bread recipe. Works as a loaf or muffins.

Dry mix:
- 2 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
Banana mix:
- 3 very ripe bananas (mashed with fork)
- 1 tsp cinnamon
- 1 tsp ground allspice
Wet mix:
- 1 stick vegan butter (e.g. Earth Balance)
- 1 cup sugar
- Dry mix — Combine flour, baking powder, baking soda, and salt in a bowl. Set aside.
- Banana mix — Mash bananas with a fork. Add cinnamon and allspice. Set aside.
- Cream the butter — In a large bowl, beat vegan butter and sugar until light and fluffy.
- Combine — Add banana mix to the butter/sugar bowl. Stir well.
- Fold in dry — Add the dry mix to the wet mix. Stir until just combined — don't overmix.
- Bake — Pour into a greased loaf pan or muffin tin. Bake at 350°F (175°C) until golden brown and a toothpick comes out clean (~25 min for muffins, ~50-60 min for a loaf).
- The riper the bananas, the better — brown/spotty is perfect
- Don't overmix the batter — lumps are fine, overmixing makes it dense
- Let it cool 10 minutes before removing from pan
- Add chocolate chips or walnuts
- Swap half the flour for whole wheat
- Add a tbsp of peanut butter for richness
